Nutrient Dense and Delicious Chocolate and Dried Fruit Granola bar Recipe

Whenever we roadtrip I feel the need to over pack snacks. Something about being trapped in a moving vehicle without adequate food and water just doesn’t sit right with me. So I embraced our ingredient household and made a batch of fresh granola bars. Here’s the deets…

Ingredients ( I doubled the recipe)

• 2-1/2 cups old fashioned rolled oats

• 1/2 cup shredded unsweetened coconut

• 1 cup chopped nuts (pecans)

• 1/2 cup peanut butter

• 1/4 cup honey

• 1/4 cup molasses

• 1/2 teaspoon coarse sea salt

• 1 teaspoon ground cinnamon

• 1/4 cup coconut oil

• 1 teaspoon vanilla extract

• 1/2 cup dried fruit (I used mulberries and cranberries)

• 1/2 cup chocolate

•1/4 cup hemp hearts

Instructions:

Preheat oven to 325 degrees fahrenheit.

Combine ingredients in bowl and mix together - I used a stand mixer with the general mixing attachment

Spread out mixture in baking dish, press down to compress ingredients

Bake for 20 minutes

Allow to cool for at least 45 minutes, then place in fridge to cool before cutting with sharp serrated knife.
